What You’ll Need
Vanilla protein powder – I’ve been loving this one lately!
Almond flour
Maple syrup
Non-dairy milk
Peanut butter – any nut/seed butter will work!
Peanuts – or any nut/seed to add crunchy texture!
Coconut oil – melted.
Chocolate chips
Sea salt
How To Make
Start by gathering the ingredients for the first layer together – vanilla protein powder, almond flour, maple syrup, and non-dairy milk. For this, I used this silicone ice tray but you can use a muffin tin with muffin liners! Combine all of the ingredients for the first layer in a bowl until it has a thick, dough-like consistency. Scoop and press into each portion of your tray.
Grab the ingredients for your second layer – peanut butter, melted coconut oil, maple syrup, salt. Set the peanuts aside for now! Combine the ingredients (except peanuts) in a bowl and mix well. Stir in the peanuts until evenly distributed. Next, spread this layer on top of the first layer in your tray. Add extra peanuts on top for more crunch!
Set your tray in the freezer for 1-2 hours to let it set.
Near the end of your freezing time, make your chocolate coating. Melt chocolate with coconut oil in 30-second intervals in the microwave, stirring between each).
Remove the bars from the freezer and the tray. Dip each bar into the melted chocolate until fully coated and place on a parchment paper lined plate or tray. Top with sea salt and set back in the freezer to harden – it should only take a few minutes!

Is there something we can substitute the coconut oil with?
Hi! Since this is a no bake recipe, you’ll want another fat source that’s solid at room temperature. I would try a vegan butter, regular butter, or ghee!
