This High Protein Cottage Cheese Fudge is gluten free, low carb, and low in sugar. This fudge is decadent, creamy, and absolutely delicious! It’s like eating your favorite chocolate bar but with more protein per bite, keeping you satisfied.
You didn’t think I would let the holidays pass without sharing a holiday classic recipe with a cottage cheese twist, did you?? It’s one of my favorite things to come up with healthier versions of classic holiday recipes and I was shocked I didn’t have one for a traditional fudge yet. So I figured, why not take it up a notch and sneak in some cottage cheese to make this a higher protein sweet treat! I’ve been seeing this on social media and wanted to make my own version and let me tell you, I was SHOCKED how fast I went through the first batch. It’s THAT good 😍
Traditional fudge is delicious but it’s usually made with heavy cream, a ton of sugar, and ingredients that aren’t as simple as they appear to be (aka long ingredient lists with additives, oils, etc.). This healthier version is high in protein, healthy fats, and made with simple ingredients to keep your blood sugar stable, curb sugar cravings, and satisfy that holiday sweet tooth! We’re keeping it simple and using only five ingredients that you might already have at home. The sweetener is optional and you can add more or less depending on how sweet you need this to be!
I promise, this is going to be a crowd pleaser at any family or friend gathering you make it for. What You’ll Need
- Cottage cheese – I like to use this full-fat one from Good Culture for the best consistency.
- Chocolate chips – You can either use chocolate chips or break apart a chocolate bar if that’s easier and what you have on hand.
- Coconut oil – I haven’t tried this with any substitutions but it might work with another oil or fat that’s solid at room temperature like this – it helps hold the fudge together!
- Vanilla extract
- Sweetener of choice – This is optional and can be added depending on how your sweet tooth is. You can use any sweetener like maple syrup, honey, coconut sugar, monkfruit, etc.
How To Make
- Line a loaf pan with parchment paper. (Tip: I like to make sure some parchment paper is hanging over the sides so it’s easy to lift and cut once set.)
- In a high-speed blender, blend the cottage cheese until completely smooth.
- In a small mixing bowl, combine the chocolate chips and coconut oil. Microwave for thirty seconds, stir, and repeat until fully melted.
- In a large mixing bowl, mix together the cottage cheese, melted chocolate, vanilla, and sweetener (if using).
- Pour the mixture into the line loaf pan and place in the freezer for one to two hours.
- Once set, remove the parchment and fudge from the pan, cut, and enjoy!

Ingredients
- 1 cup cottage cheese
- 1/3 cup chocolate chips
- 1 tbsp coconut oil
- 1 tsp vanilla extract
- 1-2 tbsp sweetener (optional – can use maple syrup, honey, monkfruit, etc.)
Instructions
- Line a loaf pan with parchment paper.
- Blend the cottage cheese until a smooth consistency forms.
- Melt the chocolate chips and coconut oil by combining in a bowl, microwave for 30 sec., stir, and repeat until smooth.
- In a bowl, mix the blended cottage cheese, melted chocolate, and vanilla together (if using sweetener, add that here).
- Pour the mixture into the line dish and freezer for 1-2 hours.
- Slice and enjoy!
