Healthy White Chicken Chili (Gluten Free, Dairy Free)

This Healthy White Chicken Chili is gluten free, dairy free, and VERY easy to make! You only have to cut one thing, everything else you throw in a large pot and it all comes together as it cooks. This chili is the perfect comfort meal to make and enjoy throughout the week (trust me, you’ll want leftovers).

One of my favorite comfort foods in the fall and winter is a big bowl of chili with some toasted sourdough. Any soup is amazing, really, but there’s something EXTRA cozy about a yummy chili! It’s natural to crave heavier, hearty meals in the colder months – not only is it colder outside but our bodies are experiencing “internal winter” too (according to Traditional Chinese Medicine). Not that you need an excuse to amp up the comfort meals but if you do… you’re just listening to your body 😉

What You’ll Need

Onion

Chicken broth – I love using bone broth in all of my soups!

Chicken thighs – boneless and skinless

White beans

Corn

Full-fat coconut milk – I prefer canned coconut milk.

Green chili

Hot sauce

Spices – chili powder, onion powder, salt

This easy, healthy white chicken chili is gluten free, dairy free. How To Make

Start by dicing the onion. Drizzle a little olive oil in a large pot, add the onion, and saute over medium heat for a few minutes until fragrant.

Next, add the broth and raw chicken. Bring this to a boil and then turn the heat down to medium/low and let it simmer for 20 minutes or until the chicken is completely cooked through. If your chicken isn’t completely covered by broth, you’ll want to flip it a few times while it’s simmering to help it cook evenly! Once cooked, remove the chicken and let it cool. Then shred it using two forks.

Add the rest of the chili ingredients to the pot, including the shredded chicken, and stir until combined. Enjoy right away or let it simmer for another 30 minutes to an hour to let the chili thicken and become even more flavorful!

Ingredients

  • 1 onion (diced)
  • 4 cups chicken broth (or bone broth)
  • 1.5-2 lbs chicken thighs (boneless, skinless)
  • 1 can white beans
  • 1 can corn
  • 1 cup full fat coconut milk (canned)
  • 1/2 cup can of green chili
  • 1 tbsp hot sauce
  • 1 tsp chili powder
  • 1/2 tsp onion powder
  • 1 pinch salt

Instructions

  • Add onion to a large pot with olive oil and sauté a few min until fragrant.
  • Add in broth and raw chicken. Bring to a boil and then turn heat down to med/low and let simmer 20 minutes or until chicken is cooked through. If your chicken is not completely covered by broth, you can flip it a few times while it’s simmering.
  • Remove chicken, let cool, and shred with 2 forks.
  • To your pot, add the rest of the chili ingredients + shredded chicken. Stir until combined.
  • Enjoy right away or let simmer for 30 min – 1 hour to let the chili thicken and become even more flavorful!
