Add onion to a large pot with olive oil and sauté a few min until fragrant.
Add in broth and raw chicken. Bring to a boil and then turn heat down to med/low and let simmer 20 minutes or until chicken is cooked through. If your chicken is not completely covered by broth, you can flip it a few times while it’s simmering.
Remove chicken, let cool, and shred with 2 forks.
To your pot, add the rest of the chili ingredients + shredded chicken. Stir until combined.
Enjoy right away or let simmer for 30 min - 1 hour to let the chili thicken and become even more flavorful!
