These Healthy Sugar Cookie Truffles are gluten free, vegan, and refined sugar free. Only made with a few whole ingredients, that you probably already have in your kitchen, these truffles are the perfect bite-size version of your favorite holiday sugar cookie!
I LOVE a classic sugar cookie and that’s why these truffles are one of my favorite recipes I’ve made this entire year. Seriously! They’re just as delicious as a full-sized sugar cookie and are the perfect balance of protein and healthy fat to help keep blood sugar stable to prevent crashes or cravings! You can easily make this dairy free and vegan by using dairy free white chocolate and a plant-based protein powder. No matter what you use to make them, I promise you’ll be obsessed. I wouldn’t be surprised if they don’t make it through the end of the week 😉
Decorating sugar cookies around Christmas time was one of my favorite things to do growing up. The delicious taste of a sugar cookie with soft, creamy, sweet icing is so nostalgic. Why You’ll Love These
- Refined sugar free – These are completely free of refined sugar and only use maple syrup as the sweetener. Don’t worry though, they’re plenty sweet!
- Easy to make – The hardest part is waiting for these to set in the freezer for a couple of hours. All you have to do is mix the ingredients, let them set, melt the chocolate, dip, and enjoy!
- Healthier sweet treat – With a balance of healthy fats, carbs, and protein, these bites are a healthier sweet treat that are great for a snack, dessert, or end of meal sweet. We have healthy fat from the cashew butter and coconut flour, carbs from the maple syrup, and protein from the vanilla protein powder.
- Dietary friendly – These are gluten free, refined sugar free and can be made dairy free, vegan, and paleo depending on what ingredients you use!
What You’ll Need
- Cashew butter – You can also use any nut/seed butter but the taste will change slightly. The runnier the better!
- Maple syrup – You can also use honey if you don’t need a vegan sweetener, or agave.
- Vanilla extract
- Almond extract – This is key for that sugar cookie flavor!
- Vanilla protein powder – My current favorites are Truvani and this one from Flavcity (code: CALLA20).
- Coconut flour – I haven’t tried this with any other flour but prefer coconut flour because it’s light and absorbs the flavors well. You could use any other flour if needed!
- White chocolate chips – If you want to keep this refined sugar free and dairy free, I love melting these white chocolate bars.
- Coconut oil
- Sea salt
- Sprinkles – Completely optional for topping. These are my favorite because they’re made with natural dyes!
How To Make
- Prepare a plate or tray, big enough to fit in the freezer, by lining with parchment paper.
- In a large mixing bowl, mix the truffle ingredients (leaving out white chocolate and coconut oil) until a thick dough forms.
- Roll the dough into balls and place on the tray. (Tip: The smaller you make them, the more you’ll have or if you maker larger, you’ll have less. Size is up to you!)
- Place in the freezer for at least one to two hours until they’re completely set.
- Once they’re set, make the chocolate coating by melting chocolate with coconut oil in the microwave for thirty seconds, stir, and repeat until completely smooth. (Tip: You could also use a double boiler method by putting a little water in a saucepan, placing a bowl with the chocolate and coconut oil on top, and letting the water in the saucepan boil until the chocolate becomes melted.)
- Next, dip each truffle into the melted white chocolate and place back on the tray. Option to add sprinkles.
- Stick the truffles back in the freezer for 30 minutes to harden and they’re ready for snacking! (Tip: Store these in a glass container for a week or in the freezer for longer.)

Ingredients
- 1/2 cup cashew butter (any nut/seed butter. see details in post)
- 3 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 1/3 cup vanilla protein powder
- 1 tbsp coconut flour
- sprinkle sea salt
Chocolate Coating:
- 3/4 cup white chocolate chips
- 1 tsp coconut oil
- sprinkles (optional)
Instructions
- Mix all ingredients (except chocolate chip & coconut oil) in a bowl until a dough forms.
- Roll the dough into cookie dough balls and place on a parchment paper-lined plate or tray. Place in the freezer for at least 1-2 hours.
- Melt white chocolate chips and coconut oil in the microwave in 20 second intervals, stirring between each (or can use double boiler method).
- Dip each sugar cookie truffle into melted white chocolate. Top with sprinkles if you wish and stick back in the freezer for 30 min to set. Enjoy!
