Healthy + Easy Berry Crisp

You guys know how much I love my Healthy Apple Crisp— I was making it almost every week this past winter— so I decided to make a summer version of it using fresh seasonal BERRIES!

I love this Berry Crisp recipe because it is seriously SO simple and quick to make and is actually super healthy in terms of dessert. I even love having it for breakfast and snacks! Psssst. I’d be lying if I said I didn’t eat the entire pan to myself in 3 days (or was it two days?? Who’s counting).

This Berry Crisp recipe is completely vegan, gluten-free, and refined sugar free but I promise anyone and everyone will enjoy!

What is the best way to serve this Berry Crisp?

My personal favorite is in a bowl with a scoop of vanilla ice cream but it is also amazing on it’s own, with yogurt or coconut yogurt, or even as topping for oatmeal!

What you need for this Healthy + Easy Berry Crisp:

  • BERRIES (duh) I used half strawberreis and half blueberries but feel free to sub your own personal preference of berries!
  • maple syrup – used as a natural sweetener
  • fresh lemon juice
  • arrowroot starch – to help thicken the berry mixture (feel free to sub cornstarch)
  • salt

Aaaaand for the crumble you will need:

  • oats
  • gluten-free 1:1 flour
  • coconut sugar
  • coconut oil
  • cinnamon
  • salt

That’s it!

Healthy Berry Crisp

Ingredients

For the berries

  • 5 cups berries
  • 1/4 cup maple syrup
  • 1 tbsp lemon juice
  • 2 tbsp arrowroot starch
  • pinch salt

For the crisp

  • 1 cup oats
  • 1 cup 1:1 gluten-free flour
  • 1/4 cup coconut sugar
  • 1/3 cup + 2 tbsp coconut oil (melted)
  • 1/2 tsp cinnamon
  • pinch salt

Instructions

  • Preheat oven to 350F.
  • Wash berries and slice if needed. Make sure they are dry! Add berries, maple syrup, lemon juice, arrowroot starch and salt to a 8×8 baking dish.
  • In a bowl, add all crumble ingredients and mix well. Add spoonfuls of crumble onto berry mixture. Bake for 40-45 minutes. Let cool and enjoy!
