Healthier Chocolate Chip Cookies

These Healthier Chocolate Chip Cookies are gluten-free, dairy-free, and made with only 4 main ingredients. They turn out perfectly chewy on the inside and crispy around the edges— you will NEVER believe they are made without any flour!

Cookies are my favorite dessert. Cookies, ice cream, and homemade cake. So safe to say, I take my cookies VERY seriously and I do not settle! These Healthier Chocolate Chip Cookies are actually insanely delicious for how simple they are to make.

They are made with nut butter, sugar (I use coconut sugar to keep them refined sugar-free), 1 egg, and chocolate chips. You will also need baking soda and a pinch of salt, but those dont count as an actual “ingredient”… right?! Easy enough right?! 😉

You can use just about any nut butter in this recipe. I personally love peanut butter or cashew butter. If you use peanut butter, they will be more like peanut butter chocolate chip cookies— HELLO, my fave flavor combo. Cashew butter has a much more neutral/subtle flavor so if you use cashew butter, they will turn out more like classic chocolate chip cookies. You can also use almond butter for an almond-y flavored cookie or even sunflower seed butter for nut-free cookies.

I typically try to buy natural nut butters without any added oils, emulsifiers, and added sugar. I look brands that contain only one ingredient (the nut!) or the nut and salt. ie. ONLY peanuts or peanuts and salt.

For these Healthier Chocolate Chip Cookies you will need:

  • nut butter— I love using peanut butter or cashew butter. See notes above.
  • 1 egg— as the binder and to help these cookies fluff up!
  • sugar— I use coconut sugar to keep the cookies refined sugar-free but feel free to swap in regular sugar if that’s what you have on hand
  • baking soda
  • salt

Healthier Chocolate Chip Cookies

Ingredients

  • 1 cup sugar (I use coconut sugar)
  • 1 cup nut butter
  • 1 egg
  • 1/4 tsp salt
  • 1 tsp baking soda

Instructions

  • Preheat oven to 350F and line a baking sheet with parchment paper.
  • Mix all ingredients except chocolate chips. Stir in chocolate chips.
  • Roll into cookie dough balls and slightly flatten the tops.
  • Bake for about 20 minutes and let cool completely before enjoying!
