Gingerbread Energy Balls (Paleo, Vegan)

I’ve been on a no-bake ROLLLLL! It just makes things so easy! I love having my freezer stocked with energy balls for pre-workout snacks or whenever I just want a lil somethin’ somethin’.

So, of course, I had to make a holiday version. To be honest, gingerbread isn’t even my favorite flavor this time of year but I am in LOVE with these! And they also happen to be paleo, vegan, and refined sugaaa-FREE!

PS. for the spices like ginger, allspice, nutmeg, etc. that I don’t use all that often, I just head to the Whole Foods bulk spices! That way I don’t have to buy a whole bottle but I can still partake in all the fun festive treats 😉

Gingerbread Energy Balls (paleo + vegan)

Ingredients

  • 1/2 cup almond butter (only ingredient should be almonds or almonds and salt)
  • 2 tbsp coconut flour
  • 2 tbsp molasses
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • couple shakes nutmeg
  • couple shakes allspice
  • dash sea salt

Instructions

  • In a medium sized bowl, mix almond butter, molasses, coconut sugar, and vanilla extract.
  • In a small bowl, combine remaining ingredients. Add these to your wet ingredients and mix well. Consistency should be similar to cookie dough (see pic above). Set in the freezer for 15 minutes, this will make it easier to roll into balls!
  • Take your bowl out of the freezer and roll dough into balls, about a heaping tablespoon each. Set back onto a plate or tray and back into the freezer for 30 minutes. Option to roll each ball in cinnamon sugar, hemp seeds, chia seeds, or whatever else you can think of! 🙂
