These Frozen Protein S’mores Bars are high protein and can easily be made gluten free and dairy free. Made with graham crackers, cool whip, and chocolate with a protein boost, these bars are a fun, chilled twist of a classic. They’re the perfect treat to cool down with after a day in the sun!
S’mores always reminds me of growing up with bonfires and summer nights with friends and family. They’re a classic, nostalgic treat that tastes delicious all year round especially by taking the flavors and turning them into other fun desserts like my S’mores Rocky Road, S’mores Cookies, and S’mores Baked Oatmeal! Can you tell I’m a little obsessed?
I’m shocked I haven’t tried a recipe like this sooner! These bars are like ice cream sandwiches but with s’mores flavors – they’re creamy, chocolatey, have a nice crunch, and are perfectly melty and messy. They take no time to make and would be great for cookouts, getting together with friends or family, making with kids, etc. I promise you, everyone will love them!

- 4 ingredients – You only need four ingredients for these to come together!
- Texture heaven – The crackers and hardened chocolate add a nice crunch while the whipped cream filling is so soft, creamy, and tastes like an ice cream sandwich.
- Customizable – The protein powder you use can be any flavor. For this recipe, I used cake batter, but vanilla, chocolate, chocolate peanut butter, etc. would all be amazing! You could also add a layer of nut butter or melt chocolate peanut butter cups for a chocolate peanut butter S’more… YUM.
- Dietary friendly – This is high protein and can be made dairy free and gluten free depending on what ingredients you use. You can make this with regular graham crackers, cool whip, and chocolate or use gluten free graham crackers, dairy free cool whip, and dairy free chocolate.
What You’ll Need
- Graham crackers – I used Annie’s Organic Honey Graham Crackers. Some other great gluten free options are these from Partake or Pamela’s.
- Cool whip – To keep this dairy free, use So Delicious coco whip! You can use regular cool whip too.
- Protein powder – I used Clean Simple Eats Cake Batter protein (Discount code: CALLA) but you can use any brand, type, and flavor!
- Chocolate chips – I love these chocolate chips or I’ll melt a chocolate bar.
- Coconut oil – To help make the melted chocolate smoother.
How To Make
- Line a medium-sized glass food container (6 or 11 cup) with parchment paper.
- Place three full graham crackers along the bottom of the container.
- Take your container of cool whip, add a scoop of protein powder, and carefully stir until it’s all mixed in. The mixture should be a slightly thicker whip! (Tip: It’s easier to stir if the whip is thawed a little first.)
- Scoop the protein whip mixture on top of the graham cracker layer and spread evenly. (Tip: You can use the entire container or I like to use enough for a thick layer and leave 1/4 to use later with fruit as a dip!)
- Next, melt chocolate by combining chocolate chips and coconut oil in a small dish. Microwave for 30 seconds, stir, and repeat until fully melted and smooth. Pour this on top of the other layers and spread evenly.
- Place three more full graham crackers on top.
- Set the container in the freezer for at least one hour (or longer for it to be more firm).
- Once the bars are frozen, carefully remove from the container, place on a cutting board to slice into six pieces along the seams of the crackers. Enjoy!
Recommended Tools
- Medium-sized glass food container – I use the Pyrex 6 or 11 cup containers.
- Silicone spatula – to smooth out the mixture before putting it in the freezer.
- Parchment paper – optional, but this helps make it easier to get out of the container when you’re ready to cut and serve!

Instructions
