These Air Fryer Fajitas are gluten free, full of flavor, and only take minutes to make! You only need five ingredients and an air fryer to make this crispy, flavorful, balanced meal. These fajitas are perfect for an easy weeknight dinner or to add to your meal prep rotation!

I love having dinners that are quick, easy, and require minimal prep. Especially during the week when I don’t have a ton of time or energy to make something new every night. Lately, my go-tos have been my Sweet Potato Pizza Crust, Roasted Vegetable Nachos, a Healthy Salmon Bowl, and of course these fajitas!

They’re great for when I’m craving something with a little more spice, substance, and will reheat well the next day or later in the week. Who doesn’t love having multiple meals from cooking once??

For how simple and easy this recipe is, it’s a delicious balanced meal. We have protein and healthy fat from the steak and fiber from the vegetables. You can eat it as is, on top of a salad, on tortillas, as nachos, or stuffed in a sweet potato!

What You’ll Need

  • Steak – I used steak in this recipe but you can use chicken, black beans, chickpeas, shrimp, etc.
  • Bell peppers – Any two different colors!
  • Onion – I prefer red onion but you can use any kind.
  • Taco seasoning – I love this spicy seasoning from Whole Foods and Siete is another great option.
  • Lime
  • Olive oil – Or any neutral oil spray, this is one of my favorites.

How To Make

  1. Prepare all of your ingredients by slicing the steak, bell peppers, and onion.
  2. Line the air fryer basket with parchment paper. (Tip: My air fryer has two baskets that I used for this recipe, but you can make everything in one!)
  3. Add the steak and vegetables to the air fryer basket and lightly spray with olive oil spray (or another neutral oil).
  4. Generously season by pouring the packet of taco seasoning on top. Then use tongs to mix and make sure everything is coated.
  5. Cook in the air fryer at 350F for 15 minutes, tossing halfway through (around 7-8 minutes).
  6. Once cooked, top with juice of one lime, serve, and enjoy! (Tip: this is great as a salad or on tortillas with some sour cream, a little cheese, and quacamole!)
