This Cottage Cheese Pumpkin Mousse is gluten free, low sugar, and high in protein. You’ll definitely want to try this light, creamy, and delicious mousse that is super quick to make and will satisfy any sweet pumpkin cravings!
Out of all of the ways to use cottage cheese to add more protein to meals, I think I have to say that one of my favorites is by making a mousse! The texture is so light, airy, and tastes like a fancy dessert when really, it’s made with minimal ingredients and is loaded with healthy fats and protein. That’s a win in my book! If you aren’t a fan of cottage cheese yet, maybe give mousse or ice cream recipes a try and see if a sweet treat will convince you 💁♀️
Some of my other favorite (and popular) mousse recipes are my Cottage Cheese Chocolate Mousse and Key Lime Mousse. Each is a very different flavor but the best thing about cottage cheese is when making it into delicious desserts, it takes on whatever flavor you mix with it and is really just there for extra creaminess! Because I love these mousse recipes so much, I figured it was time to try a pumpkin version and I honestly think that this is my absolute favorite out of all that I’ve made so far 😍
The texture is so smooth, soft, and tastes similar to pumpkin cheesecake. I love topping mine with things that add crunch like melted chocolate (that hardens into a shell) and pumpkin seeds. Other times, I’ll keep it simple with whipped cream and more cinnamon on top. You really can’t go wrong with this amazing recipe!
Why You’ll Love This
- Easy prep – All ingredients are mixed in a high-speed blender, set in the freezer, and ready to eat. The less dishes the better!
- Balanced – This is a great balanced snack or dessert since we have healthy fats and protein from the cottage cheese paired with fiber and carbs from the pumpkin puree. This helps satisfy cravings while also keeping you full.
- Dietary friendly – This is gluten free, low sugar, low carb, and high in protein.
What You’ll Need
- Cottage cheese – My favorites are from Good Culture and Kona Supernaturals because they’re organic and amazing quality!
- Pumpkin puree – Make sure to get 100% pumpkin puree, not pumpkin pie filling.
- Vanilla extract
- Powdered monkfruit – This is a great low sugar, low carb alternative to powdered sugar or refined sweeteners. You can also use organic sugar, maple syrup, honey, etc.
- Pumpkin pie spice – You could also use cinnamon if you don’t like pumpkin pie spice or don’t have it on hand!
How To Make
- Add all ingredients to the cup of a high-speed blender and blend until completely smooth.
- Transfer the mixture to a small dish and freeze for one to two hours.
- Once set, let the mousse thaw for a few minutes, add toppings of choice, and enjoy! (Tip: Toppings are completely optional but so fun! Some great options are adding yogurt, whipped cream, crushed pecans or pumpkin seeds, granola, etc.)
