I know that having cottage cheese as the base might make you second guess this dessert, but if we learned anything in 2024 it’s that cottage cheese can be the star of both sweet and savory recipes. I’m a big texture gal and when it comes to pudding recipes I need it to be smooth, thick, and creamy and that’s exactly what this recipe turned out to be! It uses only five ingredients and with cottage cheese as the base, it eliminates the need for a liquid like milk or other ingredients to help thicken things up. Blending with a banana adds creaminess and natural sweetness along with the added honey. If you want it even thicker, you can refrigerate for a few minutes before enjoying but honestly, it’s delicious enough without the wait! You probably already have all of these ingredients in your kitchen so it takes no extra effort to whip this up.

Thanks to the cottage cheese, we have a nice balance of healthy fats and protein paired with the carbs from the honey and banana which make this a blood sugar supporting treat, snack, or even breakfast! To keep it like traditional banana pudding, I love adding crushed Simple Mills Graham Crackers and sliced bananas but you can add whatever toppings you like – it would also be delicious with some granola, cinnamon, and banana.

What You’ll Need

  • Banana – This is key for the banana flavor in this pudding but also adds natural sweetness. I like to use spotty bananas since they are sweeter and softer to blend.
  • Cottage cheese – My favorite for recipes like this is the Good Culture full fat cottage cheese but any will work. You could also try this with Greek Yogurt.
  • Honey – I prefer the taste of honey with this but you can use any liquid sweetener, you might just need to adjust the amount added depending on your preference!
  • Cinnamon
  • Vanilla extract
  • Toppings of choice – My favorite graham crackers are these from Simple Mills. Fruit, granola, nuts, would also be yummy!

How To Make

  1. In a high-speed blender or food processor, add all ingredients (except toppings) and blend until smooth.
  2. Transfer the banana pudding to a cup or dish for serving. (Tip: If you’re splitting this recipe into two servings then pour the pudding to two cups.)
  3. Top with additional sliced bananas, crushed graham crackers, or other toppings of choice. Enjoy!
