Cookie Dough Bars (gluten-free + vegan)

These healthier Cookie Dough Bars have been my #1 go-to for sweet cravings! Theyโ€™re gluten-free, vegan, and made with a few simple ingredients.

I love these Cookie Dough bars mostly because their flavor and texture is so similar to normal cookie dough but also because they contain healthy fat and even a little bit of protein so that you are not spiking your blood sugar (aka more sugar cravings and hungry again immediately!)

These Cookie Dough Bars are made with wholesome ingredients that you can feel good about enjoying and will keep you full and satisfied.

Hereโ€™s what you will need

  • almond flour โ€“ hello healthy fat and fiber!
  • coconut sugar โ€“ this sweetener is less refined than regular sugar, can be used as a 1:1 replacement for regular sugar, and is very affordable and accessible! With that being said, if you have regular sugar on hand and donโ€™t feel like making a trip to the store or placing an order on Amazon, feel free to use regular!
  • coconut oil โ€“ yes, coconut is the GOOD kind of saturated fat, and no you will not change my mind ๐Ÿ˜† but if you donโ€™t like coconut oil, you can use whichever oil or butter/vegan butter you prefer.
  • almond butter โ€“ feel free to swap in your favorite nut butter but note if you are using peanut butter, these will have a more peanut butter cookie dough flavor (and now I am thinking I need to give this a try ๐Ÿคค)
  • milk of choice โ€“ almond, oat, cashew, coconut etc. will all work great!
  • vanilla extract
  • salt
  • chocolate chips โ€“ obvi!

Cookie Dough Bars

Ingredients

  • 2 cups almond flour
  • 1/3 cup coconut sugar
  • 1/4 cup coconut oil (melted)
  • 1/4 cup almond butter
  • 2 tbsp milk (I used almond milk)
  • 1 tsp vanilla extract
  • pinch sea salt
  • 1/2 cup chocolate chips

For the chocolate topping

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  • Add all cookie dough bar ingredients to a large bowl. Mix well.
  • Press cookie dough into an 8ร—8 baking dish lined with parchment paper. Freeze for 10 minutes.
  • Melt chocolate chips and coconut oil in 30 second intervals in the microwave, stirring between each.
  • Top cookie dough bars with melted chocolate, spread evenly.
  • Set in the freezer for 1-2 hours. Slice and enjoy!ย Store in the refrigerator for softer bars and freezer for slightly more solid bars.
