These healthier Cookie Dough Bars have been my #1 go-to for sweet cravings! They’re gluten-free, vegan, and made with a few simple ingredients.
I love these Cookie Dough bars mostly because their flavor and texture is so similar to normal cookie dough but also because they contain healthy fat and even a little bit of protein so that you are not spiking your blood sugar (aka more sugar cravings and hungry again immediately!)
These Cookie Dough Bars are made with wholesome ingredients that you can feel good about enjoying and will keep you full and satisfied.
Here’s what you will need
- almond flour – hello healthy fat and fiber!
- coconut sugar – this sweetener is less refined than regular sugar, can be used as a 1:1 replacement for regular sugar, and is very affordable and accessible! With that being said, if you have regular sugar on hand and don’t feel like making a trip to the store or placing an order on Amazon, feel free to use regular!
- coconut oil – yes, coconut is the GOOD kind of saturated fat, and no you will not change my mind ๐ but if you don’t like coconut oil, you can use whichever oil or butter/vegan butter you prefer.
- almond butter – feel free to swap in your favorite nut butter but note if you are using peanut butter, these will have a more peanut butter cookie dough flavor (and now I am thinking I need to give this a try ๐คค)
- milk of choice – almond, oat, cashew, coconut etc. will all work great!
- vanilla extract
- salt
- chocolate chips – obvi!

So amazing!!!! Iโm trying all your recipes
Awwwww that makes me so happy! Let me know what you think ๐
Wondering how many calories are these (not sure if my other comment went through)
I don’t include calories info in my recipes but it should be pretty quick to plug into a nutrition calculator like myfitnesspal!
Approx. 326 calories per bar.
Yum! Thank you for the idea! Kids and husband loved them and I didnโt mention it was a healthy recipe ๐
That’s always a win! So glad you guys enjoyed ๐
What if you don’t have coconut oil? Could you still do the topping with regular oil?
I would use butter or vegan butter instead or you can skip the oil all together ๐
Hi there! How can I substitute almond butter? It’s not available where i live….
Hi! You can use any nut/seed butter of choice ๐ peanut butter, cashew butter, sunflower seed butter, etc.
I have another question. Is it possible to substitute almond flour as it is quite expensiveโฆ.
Hi! I haven’t tried any subs but I am guessing that oat flour will work ๐ you can buy it online or at most grocery stores or make your own by blending oats in a blender until you reach a flour-like consistency. Let me know how it goes if you give it a try!
Could honey be used in place of coconut sugar? If so, any idea how much?
Hi there! That should work. I would start with less and just keep adding until you reach your preferred sweetness!
