These healthy chickpea blondies are gluten free, vegan, high protein, high fiber, low sugar, refined sugar free. On a brown piece of parchment paper lies golden brown blondies in the shape of the baking dish. Each is cut into even squares and topped with thick chocolate chips and flakey sea salt. These Chickpea Bondies are gluten free, vegan, high in protein and fiber. They are so fluffy, soft, and sweet, nobody will ever guess they’re made with chickpeas!

If you’re feeling skeptical about the main ingredient being chickpeas, I don’t blame you because I was too! But I promise you can’t taste them, they just add a really nice fudgey texture to these blondies. I’ve been making and snacking on these non-stop and they’ve come out perfect every time. One of the best parts about this recipe is that it comes together completely in a high speed blender!

Chickpeas add so much protein and fiber. Along with the healthy fats, oat flour, and natural sweetener, these are a great balanced treat!

What You’ll Need

  • Chickpeas
  • Maple syrup
  • Oat flour – almond flour also works!
  • Cashew butter – or other nut/seed butter.
  • Oil – I used avocado oil.
  • Baking soda
  • Chocolate chips – I’ve been loving Hu Baking Chocolate Chips!
  • Sea salt

How To Make

Preheat the oven to 350F. Line an 8×8 baking dish with parchment paper or lightly spray.

Then, rinse and drain the chickpeas. Add all of your ingredients except the chocolate chips to a blender or food processor. Blend until completely smooth. You may need to stop and scrape the sides a couple of times as you blend if the batter is thicker!

Next, add in your chocolate chips and stir until mixed throughout the batter. Transfer the batter to your baking dish. Option to add more chocolate chips on top (highly recommend because you can never have enough 😉) and sprinkle some sea salt.

Place in the oven and bake for thirty minutes until the blondies have risen and are golden. Let them cool completely before slicing and enjoy!

  • 1 cup chickpeas
  • 1/2 cup maple syrup
  • 1/3 cup oat flour (or almond flour)
  • 1/4 cup cashew butter (or any nut/seed butter)
  • 2 tbsp oil (any neutral oil, I use avocado oil)
  • 1/4 tsp baking soda
  • 1 pinch sea salt
  • chocolate chips

Instructions

  • Preheat oven to 350F and line an 8×8 baking dish with parchment paper or lightly spray.
  • Rinse and drain chickpeas.
  • Add all ingredients, except chocolate chips, to a blender or food processor and blend until smooth.
  • Add chocolate chips and stir.
  • Transfer batter to the baking dish. Optional to add more chocolate chips and salt on top.
  • Bake for 30 min. Let cool completely, slice, and enjoy!
