These healthy chickpea blondies are gluten free, vegan, high protein, high fiber, low sugar, refined sugar free. On a brown piece of parchment paper lies golden brown blondies in the shape of the baking dish. Each is cut into even squares and topped with thick chocolate chips and flakey sea salt. The texture is shown to be soft, chewy, and melt in your mouth. The top texture is crinkled and pillowy.

Chickpea Blondies (Gluten Free, Vegan)

Ingredients

  • 1 cup chickpeas
  • 1/2 cup maple syrup
  • 1/3 cup oat flour (or almond flour)
  • 1/4 cup cashew butter (or any nut/seed butter)
  • 2 tbsp oil (any neutral oil, I use avocado oil)
  • 1/4 tsp baking soda
  • 1 pinch sea salt
  • chocolate chips

Instructions

  • Preheat oven to 350F and line an 8x8 baking dish with parchment paper or lightly spray.
  • Rinse and drain chickpeas.
  • Add all ingredients, except chocolate chips, to a blender or food processor and blend until smooth.
  • Add chocolate chips and stir.
  • Transfer batter to the baking dish. Optional to add more chocolate chips and salt on top.
  • Bake for 30 min. Let cool completely, slice, and enjoy!
