Apple Pie Baked Oatmeal

This Apple Pie Baked Oatmeal is gluten-free, vegan, low-sugar, and higher in protein making it an amazing breakfast, snack, or even treat! Made with only a handful of ingredients, this recipe comes together super quickly and is perfect to throw in the oven on even the busiest mornings.

This recipe is made with REAL apples, specifically Michigan Apples, which adds the most delicious and fresh flavor boost. Fun fact for you— Michigan is the PERFECT climate for growing apples. This ideal climate and geography leads to the most flavorful, sweet, and crisp apples.

Growing up (and to this very day!) going apple picking in Michigan is one of my favorite fall activities. Something about the cool crisp air, gorgeous Michigan foliage, and hand picking local apples is so special to me! I typically go to Uncle John’s apple orchard and also enjoy cider and donuts along with it!

Okay, back to the oatmeal!

So, what is baked oatmeal you might be wondering?!

Baked oatmeal is basically a muffin and oatmeal hybrid! You take all of the ingredients you would normally add to oatmeal and bake it in the oven creating the most DELICIOUS cake/muffin-like texture.

What you will need for this Apple Pie Baked Oatmeal:

  • oats— make sure to use certified gluten-free oats if you are strict gluten-free.
  • chia seeds— since there is no egg in this recipe, the chia seeds help to bind everything together. They also add some fiber!
  • vanilla protein powder— I add in one tablespoon of protein powder for a protein boost and also adds a sweet flavor without adding any sugar.
  • 1/2 of a Michigan apple— when baking, the apples soften and become even sweeter. Your kitchen will smell amazing with the apples and the spices!
  • milk of choice— I used almond milk.
  • apple pie spice— feel free to sub cinnamon if you are unable to find apple pie spice.
  • pinch of sea salt— every good oat recipe needs a little salt!
  • baking soda

Apple Pie Baked Oatmeal

Ingredients

  • 1/2 cup oats
  • 1 tsp chia seeds
  • 1 tbsp vanilla protein powder
  • 1/2 apple (chopped)
  • 2/3 cup milk of choice
  • Few shakes apple pie spice (can sub cinnamon)
  • pinch salt
  • 1/4 tsp baking soda

Instructions

  • Preheat oven to 350F. Lightly grease an oven-safe dish and set aside.
  • In a bowl, mix together all ingredients. Pour batter into dish. Top with extra apple pie spice or cinnamon.
  • Bake for 20-22 minutes. Add toppings of choice— I used almond butter, honey, cinnamon, and bee pollen.
