As the weather has been getting warmer, days are getting longer, and the sun is consistently shining, I’ve been craving lighter foods, fruity treats, and anything refreshing! It’s the sweet spot between Spring and Summer where you’re starting to crave everything Summer brings and I’m loving every minute of it. Especially when it comes to my daily sweet treats, I’ve been leaning more on recipes with fresh fruit and lighter flavors, like my Cottage Cheese Berry Dessert and Key Lime Mousse. So when I saw Hungry Happens post an orange cake, I was hooked and inspired to make one of my own! I’m not going to lie, I’m not usually a huge fruity dessert person, but I could easily eat this cake every week for the rest of Summer… and I just might 💁♀️
There are so many things to love about this cake – first being how EASY it is to make! It looks like it took so much time and effort to get that bakery style look but really, all we’re doing is putting everything in a blender, baking, and adding a little icing. It’s that simple! Another thing is the amazing consistency, texture, and flavor – it’s light, airy, and so soft that each bite literally melts in your mouth. The orange flavor comes through without being overpowering, just a light citrus taste, and pairs so well with the sweet glaze on top. And last, but definitely not least, is that this cake is actually pretty balanced and lower sugar compared to most! It has healthy fats, protein, and carbs that will help keep you and your blood sugar satisfied.

What You’ll Need
- Whole orange – We’re using the entire orange, peel and all because it really packs in the flavor and natural sweetness of this cake. I used a large orange!
- Eggs
- Oats – I used gluten free sprouted oats but if you don’t need this to be gluten free you can use regular oats too.
- Baking powder
- Sea salt
- Neutral oil – For this, I used melted coconut oil but any neutral oil will work (avocado, olive, etc.)
- Greek yogurt – For added protein and adds to the fluffy texture! If you want to make this dairy free, use a thick vegan yogurt like Cocojune.
- Maple syrup – You can also use another liquid sweetener like honey or agave.
Orange Zest Icing
- Powdered sugar – For an even lower sugar option and to make this refined sugar free, you can use powdered monkfruit instead.
- Milk of choice – Just enough to help get that icing consistency! You can use regular milk or dairy free.
- Orange zest – This adds the orange flavor to the icing too. Gently grate the peel of the orange into the icing mixture!
How To Make
- Preheat the oven to 350F and line an 8-inch round pan with parchment paper.
- In a high-speed blender, add all of the cake ingredients and blend until completely smooth. (Tip: You should have a thick, orange color, cake batter!)
- Pour the batter into the pan and bake for 50 minutes, until risen and slightly golden.
- Once baked, place the cake on a wire rack to cool.
- In a small bowl, make the icing by combining all icing ingredients and mixing until you’ve reached your desired consistency. (Tip: Start VERY slow with adding splashes of milk, mix, and repeat until you reach the consistency you want.)
- Pour the icing over the cake and spread evenly. Option to add orange slices too!
- Slice and enjoy!

Instructions

- In a high-speed blender, blend all cake ingredients until smooth.
- Bake for 50 min, until slightly golden. Then transfer to a wire rack to cool.
- Mix icing ingredients until you reach your desired consistency. Slowly add the milk in while you do this!
- Pour the icing on top, option to add orange slices, slice, and enjoy!
