Whole Orange Blender Cake (Gluten Free, Lower Sugar)

Ingredients

  • 1 whole orange (large)
  • 3 eggs
  • 2 cups gluten free oats (or regular)
  • 2 tsp baking powder
  • 1 pinch sea salt
  • 1/4 cup oil (coconut, avocado, olive, etc.)
  • 1/3 cup Greek yogurt (or thick dairy free yogurt)
  • 3/4 cup maple syrup (or liquid sweetener of choice)

Orange Zest Icing

  • 1/2 cup powdered sugar (or powdered monkfruit)
  • milk (splashes until you reach desired consistency
  • orange zest

Instructions

  • Preheat oven to 350F and line an 8in round pan with parchment paper.
  • In a high-speed blender, blend all cake ingredients until smooth.
  • Bake for 50 min, until slightly golden. Then transfer to a wire rack to cool.
  • Mix icing ingredients until you reach your desired consistency. Slowly add the milk in while you do this!
  • Pour the icing on top, option to add orange slices, slice, and enjoy!
