Thin Mint Bites

You guys, my love for girl scout cookies runs deep 🤣 and thin mints are by far my faaaav. I used to keep them in the freezer and let me just tell you, I could easily take down a whole sleeve in a day.

Last year, I came to the sad realization that girl scouts do not come to top floor apartments in my area… who woulda thought (ha!)

So I realized I had to take things into my own hands. I thought I’d make a little treat that tasted somewhat similar, but to be honest, I shocked myself with this recipe! It’s hands down one of the best I’ve ever made. Not to mention, the ingredients are much cleaner than classic thin mints AND they’re extremely easy to make.

When I first made this recipe, I literally freaked out and immediately texted my roommates to come home and try them (because let’s be real, they weren’t going to last long home alone with me 😂). Safe to say, both of my roommies can vouch that these are better than real-deal thin mints 😉

These Thin Mint Bites are made with only 5 simple, clean ingredients. They are gluten-free, dairy-free, and vegan-friendly.

Recipe Tips

My original recipe only makes 7 balls but I typically double it and then store them in the fridge.

To make these vegan, simply swap out maple syrup for honey and use vegan chocolate chips.

If you don’t have a food processor, you can always buy oat flour at the store and then whisk the ingredients together by hand. Or you could make your own oat flour at home in your blender. See my tutorial “oat flour” in my highlights on Instagram. I have done this several times and it works great!

Different brands of nut butter may make the dough slightly different consistencies. Here, I used Julie’s Real Cacao Espresso Almond Butter. You may need to squish each heaping tablespoon of dough in your hands a couple times before rolling into balls. If your dough is too dry, you can always add a tablespoon of melted coconut oil!

Thin Mint Bites

These Thin Mint Bites are made with only 5 simple, clean ingredients. They are gluten-free and dairy-free and can easily be made vegan by swapping out maple syrup for the honey.

Ingredients

  • 1/4 cup + 2 tbsp almond butter (or cashew)
  • 1/4 cup oats
  • 2 tbsp honey (or maple syrup for vegan)
  • 1 tbsp unsweetened cocoa powder (or cacao powder)
  • 2-3 drops peppermint oil

Optional toppings

  • 1/4 cup chocolate chips
  • 1 tsp coconut oil
  • cacao nibs (or chopped chocolate chips)

Instructions

  • Blend oats in a food processor until they become a flour-like consistency.
  • Add the rest of your ingredients and blend until everything is well combined.
  • Roll into balls (about 1 heaping tbsp each). Set balls in freezer.
  • Melt chocolate and coconut oil in the microwave in 30 second intervals, stirring between each. Take your balls out of the freezer and and drizzle melted chocolate over top. Sprinkle with cacao nibs (or chopped chocolate chips) and set back into the freezer for at least 5-10 minutes.
  • Enjoy this cleaner version of your childhood favorite! I keep mine stored in glass tupperware in the refridgerator.
