I haven’t really tried making bagels at home because it seemed like every recipe requires yeast, hours of time, and is more of a process than I’d like. It wasn’t until I made my Pumpkin Bagels when I realized there was an easier way that was just as delicious as getting a bagel out AND it was healthier. Plus, more satisfying because you made it all yourself! Taking this recipe I’ve made before, I made a few adjustments to make the base even more simple and versatile. Now, you only need three ingredients for the perfect bagel base – using all pantry staples! It’s one of the easiest doughs you’ll ever make. No yeast, no waiting around for rising. Just mix, shape, brush with egg wash, and bake!

Blueberry bagels are one of my favorite flavors of bagels to get so once I perfected this base recipe, I immediately turned it into a blueberry version. They’re soft, subtly sweet, a little tangy, and taste just like a bagel you would get at a bakery! But what I really love about these, besides how good they taste, is how balanced they are. You’re getting protein from the Greek yogurt, healthy fats from the almond flour, and carbs from the flour and blueberries to fuel you without a big sugar spike. They’re one of those breakfasts or snacks that actually fill you up and keep you satisfied. To keep it even more balanced, have it with a side of chicken sausage, cup of bone broth, protein coffee, or Greek yogurt!

This recipe makes four bagels so it’s perfect to prep for the week, make extra to have a stash in the freezer, or even bake up for a brunch with friends or family. Top them with butter, honey butter, nut butter, a swipe of cream cheese, or turn them into a sandwich. There’s so many options and they all taste amazing!

What You’ll Need

How To Make

  1. Preheat the air fryer to 350F and line the basket with parchment paper. If you’re using the oven, preheat it to 350F and line a baking sheet.
  2. In a large bowl, add the dry ingredients, except for the blueberries and egg, and mix until a dough forms. Then, stir in the blueberries until evenly mixed in.
  3. Roll the dough into four balls and then slightly flatten and form a hole in the center of each dough ball.
  4. Place in the lined air fryer basket or on the lined baking sheet.
  5. For the egg wash, whisk one egg in a small bowl. Then, brush it lightly onto the top of each bagel.
  6. Air fry for 30-35 minutes or until golden. If you’re baking in the oven, bake for 35-40 minutes.
  7. Let the bagels cool for at least ten minutes before you slice and enjoy!

Ingredients

  • 1 cup plain Greek yogurt
  • 1/2 cup almond flour
  • 1/2 cup all purpose flour (or 1:1 gluten free flour)
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 1/3 cup blueberries
  • 1 egg (for egg wash)

Instructions
