This Pumpkin Spice Yogurt Bowl with Magic Shell is gluten free, high protein, and can easily be made dairy free with a couple simple swaps. If you’ve tried the viral yogurt bowl trend, you’re going to want to give this pumpkin spice version a try because it will knock all other versions out of the park! The incredibly smooth, creamy texture of the yogurt, subtle sweet pumpkin flavor, mixed with the crunch of the chocolate shell means satisfaction with every bite.
One of my favorite treats to enjoy this summer, especially on hot days when I just needed everything to be cool, was a yogurt bowl with a magic shell. This was all over social media and I instantly hopped on the trend and fell in love. Yogurt bowls are such an easy way to pack in a ton of protein in a snack or healthier dessert – just add protein powder and if you’re using Greek yogurt, you automatically get even more protein! The best part was changing up the flavors by mixing different fruits, seeds, nut butters, and even granola in the yogurt. But my favorite part? The magic chocolate shell! I knew that my obsession couldn’t stop once the weather cooled down for Fall so I HAD to make a pumpkin version and have become completely OBSESSED 😍
I love making some of my favorite higher protein snacks into a pumpkin version this time of year because not only is the flavor of pumpkin amazing, but it’s filled with so many nutrients like vitamins A, C, E (hello healthy skin and immune system!) and it’s a good source of fiber. Some of the pumpkin recipes I’ve been loving recently are my Cottage Cheese Pumpkin Mousse, Pumpkin Spice Cottage Cheese Cookie Dough, Pumpkin Protein Bars, and now this delicious Pumpkin Spice Yogurt Bowl! This bowl is the perfect blend of textures with a creamy smooth yogurt base and a crunch and sweetness from the chocolate layer. Plus, it’s so satisfying to hear that first crack break through the hardened magic shell. It’s like a reward is lying underneath 😆
Why You’ll Love This
- Blood sugar balancing – This is naturally higher in protein thanks to the Greek yogurt but even if you’re using dairy free yogurt, the added protein makes this a balanced snack or dessert. We have protein from the Greek yogurt and protein powder, healthy fats from the yogurt, and carbs from the pumpkin puree and honey (or sweetener of choice).
- SUPER quick – From start to finish, this bowl takes less than ten minutes to make so you’ll have a filling, sweet treat in no time!
- Nostalgic magic shell – Remember enjoying that chocolate that hardened when you added it to ice cream or something cold as a kid? Well, this is a MUCH healthier, simple version of that but with the same sweetness and satisfying crunch.
- Dietary friendly – This is gluten free, high protein, and can easily be made dairy free and refined sugar free depending on what yogurt and chocolate chips you use for the magic shell. For vegan, use the dairy free swaps and use maple syrup instead of honey!
What You’ll Need
- Greek yogurt – I used Organic plain Greek yogurt but you can also use vanilla and might not need the added honey for sweeteness. For dairy free, use a plain or vanilla dairy free yogurt like these from Culina or Cocojune!
- Pumpkin puree – You’ll want to make sure this is 100% pumpkin puree, NOT pumpkin pie filling.
- Vanilla protein powder – I love this vanilla protein from Truvani or Flavcity Vanilla (code: CALLA)
- Pumpkin pie spice – You can always use cinnamon instead if you don’t have pumpkin spice on hand or don’t love the taste.
- Honey – To make this vegan, use maple syrup instead.
- Chocolate chips – I love these mini chocolate chips. If you want to keep this recipe refined-sugar free or dairy free, Hu Gems are my favorite and sweetened with coconut sugar.
- Coconut oil
How To Make
- In a medium-sized bowl, mix together all ingredients except chocolate chips and coconut oil.
- Set the yogurt bowl in the fridge while you make the magic shell.
- To make the magic shell, in a separate bowl, melt the chocolate chips with coconut oil in the microwave in thirty-second intervals, stirring between each. Repeat until fully melted and smooth.
- Pour the chocolate over the yogurt bowl and spread to evenly coat the top. Option to top with flakey sea salt.
- Place the bowl back in the fridge for five minutes or until the chocolate hardens. Enjoy!
