These Easy, Healthy Carrot Fries are gluten free, vegan, and paleo. They’re simple, roasted vegetables evenly coated in a delicious spice that makes them anything but ordinary! Perfect for meal prep or an easy, quick side to any meal.

When the weather starts to cool down, I crave less raw, fresh meals like salads and smoothies, and am really in the mood for warm, comforting meals like my Homemade Roasted Tomato Soup, Eggplant Lasagna, and Sweet Potato Chili. An easy way I satisfy wanting warmer, cooked, foods while still getting a variety of vegetables in is roasting them! I love roasting vegetables but have really been on a kick lately. It’s a great way to get some color into each meal and add a bit more flavor. I love keeping things simple by tossing vegetables in olive oil, salt, and pepper, but that can get old REAL fast so mixing them with a bunch of different spices is my best hack to take things up a notch.

You can always find spice blends pre-made (I always look for organic options), recipes online, or in separate recipes like this one! These carrot fries are simple but packed with so much flavor thanks to the combination of garlic powder, onion powder, and smoked paprika (for a little heat). Chopping up carrots into fry form help them roast perfectly – caramelized and a bit crisp on the outside! I love making a batch of these for the week, storing in the fridge and then adding to any of my meals as an extra vegetable or having them as a snack with the dip included in the recipe below.

The best part? You can follow this recipe to a T or you can swap out the carrots for another vegetable to roast, OR add this seasoning to a bunch of different vegetables to really stock up! All amazing and tasty options 💁‍♀️

How To Make

  1. Preheat oven to 400F and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, add all ingredients and toss until evenly coated.
  3. Place on the lined baking tray and put in the oven to bake for thirty minutes, until slightly crispy and roasted.
  4. If making the spicy dip, in a small mixing bowl, add all dip ingredients and mix well until fully combined. Adjust spices to your liking!
  5. Serve with dip or as a side to a main dish. Enjoy!

  • 1 drizzle hot honey (or regular honey, leave out if vegan)
  • few shakes chili powder
  • few shakes oregano
  • 1 pinch salt
  • pepper (to taste)

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • In a large mixing bowl, add all ingredients and toss until evenly coated.
  • Place on parchment paper lined tray.
  • Bake for 30 min until slightly crispy.
  • To make dip: mix dip ingredients and set in the fridge until ready to enjoy carrot fries.
