Easy, Healthy Carrot Fries (Gluten Free, Vegan)

Optional dip: (loose measurements, do everything to taste/based on how much you're making)

plain Greek yogurt
(or dairy free yogurt)

(or regular honey, leave out if vegan)

Instructions
Preheat oven to 400F and line a baking sheet with parchment paper.
In a large mixing bowl, add all ingredients and toss until evenly coated.
Place on parchment paper lined tray.
Bake for 30 min until slightly crispy.
To make dip: mix dip ingredients and set in the fridge until ready to enjoy carrot fries.
