Out of all of the ways to use cottage cheese to add more protein to meals, I think I have to say that one of my favorites is by making a mousse! The texture is so light, airy, and tastes like a fancy dessert when really, it’s made with minimal ingredients and is loaded with healthy fats and protein. That’s a win in my book! If you aren’t a fan of cottage cheese yet, maybe give mousse or ice cream recipes a try and see if a sweet treat will convince you 💁‍♀️

Because I love these mousse recipes so much, I figured it was time to try a pumpkin version and I honestly think that this is my absolute favorite out of all that I’ve made so far 😍

The texture is so smooth, soft, and tastes similar to pumpkin cheesecake. I love topping mine with things that add crunch like melted chocolate (that hardens into a shell) and pumpkin seeds. Other times, I’ll keep it simple with whipped cream and more cinnamon on top. You really can’t go wrong with this amazing recipe!

How To Make

  1. Add all ingredients to the cup of a high-speed blender and blend until completely smooth.
  2. Transfer the mixture to a small dish and freeze for one to two hours.
  3. Once set, let the mousse thaw for a few minutes, add toppings of choice, and enjoy! (Tip: Toppings are completely optional but so fun! Some great options are adding yogurt, whipped cream, crushed pecans or pumpkin seeds, granola, etc.)
