These Easy, Healthy Apple Pancakes are gluten free, dairy free, and made with simple, real ingredients. They’re soft, fluffy, with a little crisp on the outside. The subtle, sweet apple flavor makes these the perfect fall breakfast!
In the Fall, everyone is obsessed with everything pumpkin (I am too ๐โโ๏ธ). But I think one of the most underrated flavors is apple! To me, there’s nothing more Fall than the cozy smell of warming cinnamon and apple. It reminds me of a freshly baked apple pie and I think we can all agree that Fall is for baking, so it just makes sense, right? I love making different recipes that focus on using fresh apples and warming spices like cinnamon, nutmeg, apple pie spice, cardamom. To kickoff my Fall baking, I’ve been loving these pancakes for breakfast on the weekend. I love having a slow morning routine that ends in sitting with a pancake stacked plate to enjoy with my coffee! They’re seriously some of the best I’ve made and I’ll probably be eating them every week for the the time being ๐ I love topping mine with a slice of butter and maple syrup – keep it simple! Some other tasty toppings would be pecans, warm spiced apples, and nut butter. What would you put on top of yours?

What Youโll Need
- Apple – Any type of apple will work, it depends on how sweet you want your pancakes! I love Honeycrisp for extra sweet or Gala for a subtle apple flavor.
- Eggs
- Oats – I use these Gluten Free Sprouted Oats because they’re Organic, glyphosate free, and soaked so they’re easier to digest. You can use any oats, gluten free or regular.
- Sea salt โ I love using a high-quality sea salt like Redmonds for any recipe!
- Cinnamon – You could also use apple pie spice.
- Vanilla extract
- Baking powder
How To Make
- Add all ingredients to the cup of a high-speed blender and blend until completely smooth.
- On the stove, heat a pan over medium heat and coat with butter or oil.
- Using about 1/3 cup per pancake, pour the batter into the pan. Make sure not to overcrowd!
- After a few minutes, when bubbles start to form, flip each pancake.
- Cook a few more minutes on the other side until golden and firm.
- Put the pancakes on a separate plate. Wipe out the pan and add more butter or oil in between batches (Tip: This is key for even cooking and color with each batch!)
- Once all of the batter is used and pancakes are plated, add toppings of choice, and enjoy!

Easy Apple Pancakes
Ingredients
- 1 apple (core removed and sliced)
- 2 eggs
- 1/2 cup oats
- 1 pinch sea salt
- cinnamon or apple pie spice (to taste)
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Blend all ingredients in a high-speed blender until smooth.
- On the stove, heat a pan over medium heat and coat in butter or oil.
- Pour 1/3 cup of batter per pancake into the pan – do not overcrowd.
- Cook for a few minutes, until bubbles form, then flip.
- Cook the other side for a few minutes until firm and golden.
- Place finished pancakes on a separate plate.
- Wipe out pan and add more butter/oil in between batches.
- Once all batter is used and pancakes are plated, add toppings of choice, and enjoy!

How many pancakes does this make?
Hi Sunny! It depends on the size of the pancakes but I was able to make three larger ones. You can always make them smaller if you want more!

Hi, I would love to try this pancake recipe, but I cannot use Oats can I sub for coconut or almond flour instead

Hi! You could use either almond or coconut flour to replace the oats. For almond flour, it’s usually a 1:1 replacement but slowly add in the liquid since almond flour doesn’t absorb as much liquid. For coconut flour, use 1/4 to 1/3 of the amount of oats listed in the recipe and you might need to add more liquid because it absorbs a lot more! I would say best bet is almond flour but either would work ๐ฅฐ
