These easy healthy apple pancakes are gluten free, dairy free, refined sugar free, paleo friendly, plant based, high fiber, and clean eating. Made with simple, whole ingredients in a blender! On a white plate is a stack of three golden brown pancakes with slightly crisp edges and show a soft, fluffy texture inside. Topped with a slice of yellow white butter and organic maple syrup rich and dripping down the sides, giving the pancakes a yummy glaze.

Easy Apple Pancakes

Ingredients

  • 1 apple (core removed and sliced)
  • 2 eggs
  • 1/2 cup oats
  • 1 pinch sea salt
  • cinnamon or apple pie spice (to taste)
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  • Blend all ingredients in a high-speed blender until smooth.
  • On the stove, heat a pan over medium heat and coat in butter or oil.
  • Pour 1/3 cup of batter per pancake into the pan - do not overcrowd.
  • Cook for a few minutes, until bubbles form, then flip.
  • Cook the other side for a few minutes until firm and golden.
  • Place finished pancakes on a separate plate.
  • Wipe out pan and add more butter/oil in between batches.
  • Once all batter is used and pancakes are plated, add toppings of choice, and enjoy!
