Easy Apple Pancakes

Ingredients

apple
(core removed and sliced)

eggs
1/2
cup
oats

pinch
sea salt
cinnamon or apple pie spice
(to taste)

tsp
vanilla extract
1
tsp
baking powder
Instructions
Blend all ingredients in a high-speed blender until smooth.
On the stove, heat a pan over medium heat and coat in butter or oil.
Pour 1/3 cup of batter per pancake into the pan - do not overcrowd.
Cook for a few minutes, until bubbles form, then flip.
Cook the other side for a few minutes until firm and golden.
Place finished pancakes on a separate plate.
Wipe out pan and add more butter/oil in between batches.
Once all batter is used and pancakes are plated, add toppings of choice, and enjoy!
