This High Protein Quiche is gluten free, low carb, can be made dairy free, and comes together in minutes. The crust is crispy and crunchy while the eggs inside are deliciously soft and cheesy. If you love the taste and flavors of a traditional quiche but don’t want to put in the time to make it from scratch, this is a quick alternative that you’ll want to try!
I had been seeing this viral recipe all over social media and knew I needed to give it a try. It’s easy for me to have my go-to breakfast fixations that I have almost every day so when I find something new to add to the rotation, it’s a win! I love traditional quiche but it can be time-consuming to make sure the crust is just right and the filling is perfectly baked – I usually only have it for brunches or holidays with friends or family. So when I saw how easy this trend was, I made it ASAP. I had everything on hand already AND what could be easier than throwing everything together in one dish and baking?
I also love that this is high in protein from the eggs and cottage cheese. I’ve been really prioritizing protein in my meals, especially in the morning, and have noticed a huge difference in my energy levels and cravings! Making sure our meals are a good balance of fiber, fat, and protein is amazing for blood sugar and when we start the day that way our levels tend to be more stable throughout the day 🙌 Your hormones, gut health, and overall mood will thank you for it!
Why You’ll Love This Breakfast
- High protein – This breakfast packs protein from the eggs and cottage cheese. Along with the fiber from the veggies, fat from the cheese, and carbs from the tortilla, this is a great balanced breakfast!
- Quick & easy – It comes together in minutes so it’s still great to enjoy when you’re running short on time.
- Dietary friendly – Depending on the ingredients used this can be gluten free and dairy free!
What You’ll Need
- Burrito-sized tortilla – I used Siete Burrito tortillas, they’re my favorite gluten free option! They’re slightly bigger than the regular ones and hold together really well.
- Eggs
- Cottage cheese – My favorite has been this one from Good Culture.
- Vegetables of choice – I used spinach and tomatoes for this recipe!
- Cheddar cheese – You can leave out or swap for dairy free version too.
- Sea salt
- Pepper
How To Make
- Preheat oven to 350F and lightly spray a round quiche dish (I used this one!)
- Place a burrito-sized tortilla in the dish. Add eggs, cottage cheese, toppings of choice (I love whatever veggies I have in the fridge), salt, and pepper. Stir to combine. Top with shredded cheese.
- Bake for 15-20 minutes until the edges are slightly crispy and golden.
- Let it cool for a few minutes, slice, and enjoy!
Recommended Tools
- Quiche dish – I like this one.
- Pizza cutter – Once you take the quiche out of the pan, just cut it into slices like a pizza!

I made this, but I used ricotta cheese instead. It was DELICIOUS! Many thanks. I made it in a pan on the stove and put it under broiler for a few minutes.
That sounds amazing! I’ll have to try your version next time I make this. Glad you liked it 🥰
