I had been seeing this viral recipe all over social media and knew I needed to give it a try. It’s easy for me to have my go-to breakfast fixations that I have almost every day so when I find something new to add to the rotation, it’s a win! I love traditional quiche but it can be time-consuming to make sure the crust is just right and the filling is perfectly baked – I usually only have it for brunches or holidays with friends or family. So when I saw how easy this trend was, I made it ASAP. I had everything on hand already AND what could be easier than throwing everything together in one dish and baking?

I also love that this is high in protein from the eggs and cottage cheese. I’ve been really prioritizing protein in my meals, especially in the morning, and have noticed a huge difference in my energy levels and cravings! Making sure our meals are a good balance of fiber, fat, and protein is amazing for blood sugar and when we start the day that way our levels tend to be more stable throughout the day 🙌 Your hormones, gut health, and overall mood will thank you for it!

What You’ll Need

How To Make

  1. Preheat oven to 350F and lightly spray a round quiche dish (I used this one!)
  2. Place a burrito-sized tortilla in the dish. Add eggs, cottage cheese, toppings of choice (I love whatever veggies I have in the fridge), salt, and pepper. Stir to combine. Top with shredded cheese.
  3. Bake for 15-20 minutes until the edges are slightly crispy and golden.
  4. Let it cool for a few minutes, slice, and enjoy!
