This healthy high protein quiche is gluten free, keto, low carb, can be dairy free, paleo friendly, plant based. On a wood cutting board set in natural sunlight, a round quiche is placed with the crispy crust edges golden brown and wavy from baking. The inside is fluffy, soft texture with bright yellow eggs, green from the spinach, red from tomatoes, and darker yellow from melted shredded cheese on top. Cut into 4 slices, one is taken out to show the soft texture of the filling.

High Protein Quiche (Gluten Free, High Protein)

Ingredients

  • 1 tortilla (burrito sized)
  • 3 eggs
  • 1/4 cup cottage cheese
  • shredded cheese (as much as you'd like, sprinkled on top)
  • 1 pinch salt
  • 1 pinch pepper

Toppings of choice: I added tomatoes and spinach

    Instructions

    • Preheat oven to 350F and lightly spray a round quiche dish.
    • Place a burrito-sized tortilla in the dish. Add eggs, cottage cheese, and whatever toppings you like, salt, pepper, and stir to combine. Top with some shredded cheese.
    • Bake 15-20 minutes until the edges are slightly golden and crispy.
    • Let cool for a few minutes, slice, and enjoy!
