This Healthier Reese’s Poke Cake is gluten free, can easily be made dairy free, and is perfect to make for yourself or anyone that is just as obsessed with chocolate and peanut butter! To make this completely dairy free, swap out some of the ingredients for dairy free alternatives.

I love a good chocolate peanut butter recipe and this is one I don’t think I’ll get tired of no matter how many times I make it. I’m already planning on having this as my birthday cake this year!

The cake is so soft and moist from the chocolate and peanut butter that seep through the holes. It seriously melts in your mouth with every bite! My favorite part though is the frosting. There’s nothing better than a fluffy frosting and this peanut butter one delivers 🤩

What You’ll Need

  • Boxed cake mix – I love Simple Mills because it’s gluten free, has simple ingredients, and is low sugar!
  • Peanut butter – I use Organic Kirkland. You want it to be runny since you’ll be pouring it.
  • Chocolate chips
  • Butter
  • Powdered sugar – or powdered monkfruit.
  • Milk
  • Peanut butter cups or more chocolate for topping!

How To Make

Start by making your favorite boxed cake mix according to the instructions. One of my favorite pre-made mixes is the Simple Mills chocolate almond flour mix! The bake and flavor are amazing and I love the short, simple ingredient list for a gluten free and low sugar option 🙌

Once the cake is baked, let it cool completely and then poke holes into it. I used a thick straw to poke holes in even rows, but use whatever you have on hand!

Next, pour your peanut butter right over the holes in the cake and do the same with some melted chocolate. To melt your chocolate, microwave it for 30 seconds, stir, and repeat until fully melted. Gently spread the peanut butter and chocolate over the top.

To make the frosting, start by beating together six tablespoons of softened butter (can be dairy free) and six tablespoons of peanut butter. Add in your powdered sugar and beat again. Next, add milk in a little at a time while mixing until you reach desired consistency.

Once the frosting is done, spread it evenly over the top of the cake and top with chopped peanut butter cups or just more chocolate chips! I used my easy homemade peanut butter cup recipe 💁‍♀️

Note: my cake mix only makes one 8-inch round cake! If you want to use a cake mix that makes two, you may want to double the frosting recipe.

Ingredients

Poke Cake

  • 1 box vanilla cake mix
  • peanut butter (runny is best)
  • chocolate chips (melted)

Peanut Butter Frosting

  • 6 tbsp butter (softened, regular or dairy free)
  • 6 tbsp peanut butter
  • 1.5 cups powdered sugar
  • 2 tbsp milk of choice (regular or dairy free)

Toppings

  • peanut butter cups (see post above for my easy homemade recipe)
  • chocolate chips (another great option)

Instructions

Poke Cake

  • Make your favorite boxed cake mix. Let it cool completely then poke holes into the cake.
  • Pour peanut butter over the holes and spread.
  • Melt chocolate chips by microwaving for 30 seconds, stir, and repeat until fully melted. Pour over the holes and spread.

Peanut Butter Frosting

  • Beat together softened butter and peanut butter.
  • Add powdered sugar and beat again.
  • Slowly add in milk of choice while mixing until desired consistency is reached.
  • Spread frosting over cake, top with chopped peanut butter cups or chocolate chips, and enjoy!
