How To Make

Preheat your oven to 350F and line a baking sheet with parchment paper. Gather your ingredients!

Start by beating together the butter and sugar until creamed. Add in the egg, vanilla, and almond extract and beat until completely smooth.

Next, add in the almond flour, oat flour, spices, salt, baking soda, and beat again until smooth. I’ve tested this with a lot of different flours and the combination of almond and oat is what works best! I tried using 1:1 gluten free flour and they didn’t turn out well, so I can’t promise using other flour will work. Also, if you don’t have all of the chai spices and want to keep these simple, they still taste amazing with only cinnamon added!

Once fully prepared, chill the dough for at least 1 hour. After it’s had time to chill, scoop about 1 heaping tbsp per cookie (or use a cookie scoop), roll it into a ball, and place it on the baking sheet. Do this with the rest of the dough and slightly flatten each before baking. Bake for about 10 minutes, until slightly golden.

Let them cool completely before icing! To make the icing, combine your powdered sugar, ground nutmeg, and mix in milk a little at a time until you’ve reached your desired consistency. Once the cookies are fully cooled, cover each top with icing and it’s time to enjoy!
