I love whipping up a batch of these to have on hand for a little pre-workout snack or any time my sweet tooth kicks in!
The base is gluten-free, dairy-free, and refined-sugar free so you really can’t go wrong with which time of the day you decide to munch on a few! Sometimes I’ll even have a couple with my coffee first thing in the morning 😉
Chocolate Chip Oatmeal Energy Balls
Servings: 16 balls
Ingredients
- 1 & 1/2 cups oats (I use sprouted!)
- 1/2 cup coconut sugar
- 1/4 cup coconut oil* (melted then cooled)
- 2 tbsp almond milk
- 1 tsp vanilla extract
- 1/4 cup chocolate chips
Instructions
- Blend everything besides chocolate chips in a food processor.
- Stir in chocolate chips.
- Roll into balls (I used a cookie scoop so they would all be about the same size).
- Store in the fridge or freezer! I personally prefer the freezer 🙂

*use refined coconut oil if you don’t want a coconut tasteÂ
