Growing up, I loooooved Peanut Butter Chocolate Chip Oatmeal Cookies! I made my own version using oat flour instead of white flour, coconut sugar and maple syrup as unrefined sweeteners, and natural peanut butter rather than conventional peanut butter (which is usually filled with inflammatory oils and GMO sugar). Fun fact: any sugar that is not specifically labeled non-gmo or organic is most likely GMO.
By making these swaps, this recipe is actually a pretty dang nutritious snack or treat and it doesn’t spike my blood sugar or make me feel… well… bleh.
Don’t get me wrong, my mom loves healthier treats and desserts but if I am being honest… she is one of my toughest critics! She has a sweet tooth (wonder where I got mine ๐คจ) so whenever I make a recipe and use her as my first taste-tester, 9 times out of 10 she tells me it needs to be sweeter.
BUT, when she tried these cookies for the first time, she said they tasted like they came straight from a bakery. So, I will take that as a mission accomplished ๐

Peanut Butter Chocolate Chip Oatmeal Cookies
Ingredients
- 1 cup oats
- 1/2 cup oat flour*
- 1 cup peanut butter (only ingredient should be peanuts or peanuts and salt)
- 2 eggs
- 1/4 cup coconut sugar (can sub any kind of sugar)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- pinch sea salt
- 1 cup chocolate chips
Instructions
- Preheat oven to 350F. Line a baking sheet with parchment paper and set aside.
- Mix together peanut butter, eggs, coconut sugar, maple syrup, and vanilla. The consistency will be similar to a thick caramel.
- Whisk in the rest of your ingredients except for the chocolate chips.
- Stir in chocolate chips.
- Using a cookie scoop or a spoon, scoop out about 1 heaping tablespoon for each cookie dough ball. Roll into balls and set onto baking sheet.
- Flatten each cookie dough ball using the bottom of your palm. You want to flatten them quite a bit because they don't flatten very much on their own when baking. Top with additional chocolate chips and sea salt.
- Bake for 7-10 minutes. Let cool completely before removing them from the tray.
These cookies are amazing! They are both soft and chewy at the same time. My sister and I love them!
