Viral Feta Salmon Pasta (High Protein)

Ingredients

  • 1 salmon filet
  • 1 cup cherry tomatoes (halved)
  • 1/4 block feta (about 1.5-2oz)
  • 1 serving gluten free pasta (or regular)
  • 2 tsp olive oil
  • salt & pepper (to taste)

Instructions

  • Preheat oven to 425F and lightly spray the bottom of the baking dish.
  • Add the salmon, feta, and tomatoes to the baking dish and drizzle with olive oil, salt, and pepper.
  • Bake for 20 min, until salmon is cooked through.
  • Cook pasta according to package (reserve 2 tbsp pasta water).
  • Use a fork to break apart the salmon and mix everything in the baking dish together.
  • Add cooked pasta and pasta water, mix well.
  • Serve and enjoy!
