Sweet Potato Pizza Crust (Gluten Free)

Ingredients

  • 1 sweet potato (medium-sized)
  • pizza toppings of choice (see above for suggestions)

Instructions

  • Preheat oven to 350F and line a tray with parchment paper.
  • Wash the sweet potato and make a few holes with a fork. Bake for 45 min or until tender. Let cool.
  • Slice potato in half. Place another sheet of parchment paper on top and use a glass or bowl to press the potato down into a thin layer.
  • Remove the parchment paper on top and add pizza toppings.
  • If using ingredients that need to melt or be warmed (cheese, meat, etc.) place back in the oven for a few minutes until melted and crust is slightly golden.
  • Slice and enjoy!
