Snickers Peanut Butter Banana Pops (Gluten Free, Vegan)

Ingredients

  • 1 banana
  • peanut butter (or any nut/seed butter)
  • peanuts (or any nut/seeds)
  • chocolate chips
  • 1 tsp coconut oil

Instructions

  • Cover a small baking sheet or plate with parchment paper - make sure it will fit in your freezer.
  • Add peanut butter to a shallow bowl or plate and set aside.
  • Add peanuts to a shallow bowl and set aside.
  • Melt chocolate by combining chocolate chips and coconut oil in a small bowl. Microwave for 30 seconds, stir, and repeat until fully smooth.
  • Slice a banana in half and place a popsicle stick in each.
  • Dip the banana half in peanut butter, fully covering. Then roll in peanuts. Repeat with each banana half you have.
  • Place on the parchment paper lined tray and set in the freezer for 15 min.
  • Once slightly frozen, dip each half into the melted chocolate, fully covering.
  • Place back on the parchment paper lined tray and in the freezer for at least 2 hours.
  • When done, let them thaw slightly, and enjoy!
