This healthy single-serve cottage cheese brownie is gluten free, keto, low sugar, and high protein. It's an easy healthy dessert. In a small white dish there is a rich dark chocolate brownie with a lava cake, gooey, fudgey texture. Chocolate chunks lay on top that have melted into the brownie. A white dollop of whipped cream and chocolate drizzle is on top of everything. A spoonful of the brownie is shown to show the soft gooey texture and melting chocolate.

Single-Serve Cottage Cheese Brownie (Gluten Free)

Ingredients

  • 1/4 cup cottage cheese
  • 1 scoop chocolate protein powder
  • 2 tbsp cocoa powder (or cacao powder)
  • 1 tbsp maple syrup
  • 1 pinch sea salt
  • 1 splash vanilla extract
  • 1/4 tsp baking powder
  • 1 tbsp almond milk (any dairy free or regular milk)
  • chocolate chips (add what you like!)

Instructions

  • Add all of the ingredients except for the almond mik to a microwave safe dish and stir.
  • Slowly add and stir in almond milk until you reach a very thick batter consistency.
  • Microwave for 1 minute.
  • Let cool slightly and enjoy! Option to add a drizzle of chocolate, coconut cream, or ice cream on top.
