Protein Lava Cake (Gluten Free, Low Sugar)

scoop
chocolate protein powder
(about 1/4 cup)

tbsp
gluten free flour
(or regular flour)

tbsp
cocoa powder
(or cacao powder)
1
tbsp
sweetener of choice
(optional)
1/4-1/3
cup
milk of choice
(see notes above)
1
square
dark chocolate
(or 1 tbsp chocolate chips)
Instructions
Lightly grease an 8oz ramekin or similar baking dish.
In a mixing bowl, add all ingredients except chocolate square/chips and mix well.
Pour batter into baking dish.
Add chocolate square/chips to the center and gently press down and cover with batter.
Microwave 45 sec. or until cooked through (don't overcook or it will be dry). Until risen and fluffy.
Let it cool a couple of minutes.
Option to go around the edges of the dish with a butter knife to loosen the cake and then remove from the dish.
Top with powdered sugar and enjoy!
