This easy healthy high protein lava cake is gluten free, low sugar, high protein, and can be made vegan, dairy free. On a small white plate is a single serve lava cake round and the shape of a baking dish. The outside is firm, rich chocolate brown color, with a pillowy soft inside and melted chocolate center oozing out of the sliced middle. Topped with white powdered sugar.

Protein Lava Cake (Gluten Free, Low Sugar)

Ingredients

  • 1 scoop chocolate protein powder (about 1/4 cup)
  • 2 tbsp gluten free flour (or regular flour)
  • 1 tbsp cocoa powder (or cacao powder)
  • 1 tbsp sweetener of choice (optional)
  • 1/4-1/3 cup milk of choice (see notes above)
  • 1 square dark chocolate (or 1 tbsp chocolate chips)

Instructions

  • Lightly grease an 8oz ramekin or similar baking dish.
  • In a mixing bowl, add all ingredients except chocolate square/chips and mix well.
  • Pour batter into baking dish.
  • Add chocolate square/chips to the center and gently press down and cover with batter.
  • Microwave 45 sec. or until cooked through (don't overcook or it will be dry). Until risen and fluffy.
  • Let it cool a couple of minutes.
  • Option to go around the edges of the dish with a butter knife to loosen the cake and then remove from the dish.
  • Top with powdered sugar and enjoy!
