Pistachio Cottage Cheese Ice Cream (High Protein, Low Sugar)

Ingredients

  • 1 cup cottage cheese
  • 1/3 cup pistachios
  • 1/4 cup maple syrup (or liquid sweetener of choice)

Instructions

  • Add all ingredients to the cup of a blender or food processor. Blend until smooth.
  • Pour into a medium glass dish or food container and freeze for at least 2-4 hours. Stir halfway to prevent iciness.
  • Once set, scoop, serve, and enjoy!
