Mini Broccoli Pizza Bites (Gluten Free, Low Carb)

Ingredients

  • 8 cups broccoli (or cauliflower)
  • 2 eggs
  • 1/3 cup almond flour
  • 1/4 cup grated parmesan
  • herbs (oregano, Italian seasoning)
  • 1 tbsp olive oil

Toppings: see above for ideas, use whatever sounds good!

    Instructions

    • Preheat oven to 400F and line a baking sheet with parchment paper.
    • Add all ingredients except toppings to a food processor, pulse until combined.
    • Scoop and form the mixture into a ball and place on the sheet in rows. Leave about 2 inches between each. Gently flatten each ball into a crust shape.
    • Bake for 20 min, until slightly brown along the edges.
    • Add toppings and bake again for 5-10 min until cheese is melted or toppings are warmed.
    • Let cool a couple of minutes to firm and enjoy!
