High Protein Mint Chocolate Chip Ice Cream (Gluten Free, Low Sugar)

Ingredients

  • 1 cup cottage cheese
  • 3 tbsp maple syrup (or honey, monk fruit)
  • 1/4 tsp spirulina (optional, for green color)
  • a couple drops peppermint extract (a little goes a long way!)
  • chocolate chips (chopped)

Instructions

  • Place all ingredients except for chocolate chips in the cup of a high-speed blender.
  • Blend until smooth. Pour into a medium-sized glass food container.
  • Add chocolate chips and stir to evenly distribute.
  • Place in freezer for at least 2 hours, stirring halfway through to prevent iciness.
  • Once set, scoop, and enjoy!
