High Protein Curry Soup (Gluten Free, Dairy Free)

small white onion

(or meat of choice)

red curry paste
(depending on the spice level you want)

curry powder
salt & pepper
(to taste)

bone broth
1
cup
full fat coconut milk
(from a can)

handfuls
spinach
Instructions
Finely chop onion and garlic. Slice zucchini into coins and then halves.
Add coconut oil to a soup pot over medium heat and add onion, garlic, zucchini. Cook until vegetables soften.
Add ground turkey and brown until cooked through.
Add in curry powder, salt, pepper, and curry paste. Stir and cook for a few minutes.
Stir in bone broth and coconut milk. Bring to a boil and then turn the heat down to simmer for at least 15 min.
Turn heat off and stir in a few big handfuls of spinach.
Option to top with sour cream, cilantro, and hot sauce. Enjoy!
