Healthy Pumpkin Chocolate Chip Bread (Gluten Free, Dairy Free)

Ingredients

  • 1.5 cups oat flour
  • 1 cup pumpkin puree
  • 1/2 cup coconut sugar (or regular sugar)
  • 1/4 cup avocado oil (or any neutral oil)
  • 2 eggs
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • 1 pinch sea salt
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips + more for topping

Instructions

  • Preheat oven to 350F and line a loaf pan with parchment paper.
  • In a medium bowl, add all ingredients except chocolate chips and mix well. Gently fold in chocolate chips.
  • Pour batter into loaf pan and spread evenly.
  • Top with extra chocolate chips.
  • Bake for 45-50 minutes, when risen and golden brown.
