Healthier Old Fashioned Apple Cake (Gluten Free)

Ingredients

  • 3 large apples (about 4 cups diced)
  • 1 cup sugar (cane, coconut, etc.)
  • 1/2 cup avocado oil (or melted coconut oil)
  • 2 eggs
  • 2 cups 1:1 gluten free flour
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 2 tsp baking soda

Instructions

  • Preheat oven to 350F and lightly spray a 9x13 baking dish with oil.
  • Add apples to the baking dish, coating the bottom.
  • Add rest of the ingredients and mix well.
  • Bake for 40min until slightly golden and crisp.
  • Serve with ice cream or whipped cream and enjoy!
