This high protein banana bread is gluten free, refined sugar free, low sugar, high protein, and made with cottage cheese. A loaf of banana bread in the shape of a loaf pan sits on brown parchment paper. The outside is golden brown, slightly crisp and it's cut into even slices to show the inside texture. The inside is soft, pillowy, moist, and fluffy. Thick chocolate chips are inside and on top of the bread. Thick flakes of sea salt are on top for more flavor.

Cottage Cheese Banana Bread (Gluten Free)

Ingredients

  • 3 spotty bananas
  • 2 eggs
  • 1/2 cup cottage cheese
  • 2 cups oat flour
  • 1/4 cup honey
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • chocolate chips (as many or as little as you like)

Instructions

  • Preheat oven to 350F and line a loaf pan with parchment paper.
  • In a large bowl, mash the bananas and cottage cheese until smooth. Add the rest of the ingredients except chocolate chips and mix well.
  • Fold in chocolate chips and pour into loaf pan. Top with extra chocolate chips.
  • Bake 40-45 min.
  • Let cool, slice, and enjoy!
