Cinnamon Sugar Apples (Gluten Free)

Ingredients

  • 2 apples
  • 2 servings pancake mix of choice
  • cinnamon (to taste)

Cinnamon sugar topping: Primal Palate cinnamon sugar OR mix cinnamon with sugar of choice.

    Instructions

    • Core each of the apples and then slice into apple rings. Set aside.
    • Make the pancake batter according to package. Add a few shakes of cinnamon, mix, and set aside.
    • Heat a large pan on the stovetop and add cooking oil or butter to lightly grease.
    • Dip each apple ring into the pancake batter and then place onto the pan. Repeat with each apple ring. (You might need to cook in batches depending on size of the rings and pan)
    • Cook for 1-2 minutes on each side. The outside should be slightly crisp.
    • When done, transfer to a plate and sprinkle cinnamon sugar over top. Enjoy!
