Chunky Monkey Banana Cookies

bananas
(the spottier, the better!)

rolled oats

cup
honey
(or maple syrup to keep vegan)

cup
peanut butter
(only ingredient should be peanuts or peanuts and salt)

flax egg

sea salt

walnuts
(roughly chopped)

chocolate bar of choice + more for topping
(chopped)
Instructions
Preheat oven to 350F and line a cookie sheet with parchment paper.
Make flax egg (see Instagram highlights for tutorial).
In a large bowl, mash bananas with a fork. Add in the rest of the ingredients and mix well.
Scoop out a heaping tablespoon for each cookie and place on the cookie sheet. Top with additional chocolate chunks and sprinkle of sea salt.
Bake for 10-12 minutes or until fully cooked through.
Optional— drizzle with extra peanut butter. Let cookies set for at least 10 minutes before removing them from the cookie sheet.
