In a bowl, mix peanut butter, maple syrup, rice cereal, and oat flour.
Using a cookie scoop, scoop out balls (about 1 heaping tablespoon each)— you can roll them with your hands to make smooth. Place on a parchment paper lined plate or tray.
Set in the freezer for at least 30 minutes.
Melt chocolate chips and coconut oil in microwave in 30 second intervals, stirring between each.
Dip each ball into melted chocolate and set back in the freezer to set. Keep stored in the freezer.
