Carrot Cake Banana Bread (Gluten Free, Dairy Free)

coconut oil
(melted + cooled)

vanilla extract

(or allspice)

ginger powder

sea salt

grated carrots

cup
raisins
1/3
cup
walnuts
Maple Cream Cheese Frosting
1/4
cup
cream cheese
(softened, vegan if needed)

tbsp
butter
(softened, vegan if needed)

tbsp
maple syrup
1 1/4

powdered sugar

pumpkin pie spice
Instructions
Banana Bread
Preheat oven to 350F. Line a loaf pan with parchment paper or lightly grease it.
Blend oats until you reach a flour-like consistency. (see above for instructions if you are not using a blender)
Add in all ingredients except carrots, raisins, walnuts. Blend again.
Stir in carrots, raisins, walnuts by hand.
Transfer batter to the loaf pan and smooth out the top.
Bake 30-35min until golden and slightly raised.
Let cool and make frosting.
Maple Cream Cheese Frosting
Beat together cream cheese and butter.
Add in maple syrup and pumpkin pie spice. Combine.
Slowly mix in powdered sugar until you've reached desired consistency and the frosting is smooth.
Spread frosting over cooled bread and sprinkle with cinnamon. Enjoy!
