This healthy carrot cake banana bread is gluten free, dairy free, low sugar, and easy recipe. On a sheet of brown parchment paper lies slices of banana bread in the shape of the loaf pan. Each slice is golden brown with fluffy, soft texture inside, orange carrots, walnuts, and raisins poking through for texture. It's topped with a creamy white maple cream cheese frosting and topped with sprinkled of brown cinnamon for more flavor.

Carrot Cake Banana Bread (Gluten Free, Dairy Free)

Ingredients

Banana Bread

  • 2 cups oats (or oats flour)
  • 2 ripe bananas
  • 2 eggs
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil (melted + cooled)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (or allspice)
  • 1/4 tsp ginger powder
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • 1 cup grated carrots
  • 1/3 cup raisins
  • 1/3 cup walnuts

Maple Cream Cheese Frosting

  • 1/4 cup cream cheese (softened, vegan if needed)
  • 1 tbsp butter (softened, vegan if needed)
  • 1 tbsp maple syrup
  • 1 1/4 cups powdered sugar
  • 1/8 tsp pumpkin pie spice

Instructions

Banana Bread

  • Preheat oven to 350F. Line a loaf pan with parchment paper or lightly grease it.
  • Blend oats until you reach a flour-like consistency. (see above for instructions if you are not using a blender)
  • Add in all ingredients except carrots, raisins, walnuts. Blend again.
  • Stir in carrots, raisins, walnuts by hand.
  • Transfer batter to the loaf pan and smooth out the top.
  • Bake 30-35min until golden and slightly raised.
  • Let cool and make frosting.

Maple Cream Cheese Frosting

  • Beat together cream cheese and butter.
  • Add in maple syrup and pumpkin pie spice. Combine.
  • Slowly mix in powdered sugar until you've reached desired consistency and the frosting is smooth.
  • Spread frosting over cooled bread and sprinkle with cinnamon. Enjoy!
