Blueberry Cottage Cheese Cheesecake (Gluten Free, High Protein)

Ingredients

  • 1 egg
  • 1 scoop vanilla protein powder
  • 1/2 cup cottage cheese
  • 1 handful blueberries (fresh or frozen)

Instructions

  • Preheat oven to 350F and lightly grease an 8oz ramekin or baking dish.
  • Add everything to the cup of a high speed blender. Blend until completely smooth.
  • Pour mixture into the baking dish and bake for 25min until risen and slightly firm.
  • Let cool slightly, add toppings of choice, and enjoy!
